SNACK ATTACK

One of my go to salty, sweet, caramelly treats is a stuffed date!


The date and peanut butter combo is a whole food snack and contains lots of vitamins and minerals, protein and healthy fats. These simple, no-cook treats will be ready for chilling in just 5-10 minutes! As with any indulgent treat, enjoy them in moderation.




Ingredients:

  • 6 Medjool dates

  • 1/4 cup creamy or crunchy peanut butter (or substitute other nut butter like almond, cashew)

  • Dark chocolate *optional

  • Crushed nuts *optional

  • Pinch of flaked sea salt *optional

Method:

  1. Slice the Medjool dates halfway lengthwise the length of the whole date, but make sure to not cut it all the way through widthwise.

  2. Fill the center of each date with a spoonful of peanut butter.

  3. If using chocolate, melt dark chocolate on a stovetop or using the microwave (20 secs at a time).

  4. Once melted, use a spoon to cover the stuffed dates with chocolate, or use drizzle on top of the dates. Set aside. Once all are done, place in fridge for 5-10 minutes to chill.

  5. If using different toppings, sprinkle whatever you desire on top! and then set the dates aside on a serving plate or container.
