NUT BUTTER PROTEIN BALLS

If you are someone who is always on the go, or a 2pm snacker - this one is for you.


These delicious protein balls will no doubt give you a quick energy boost and satisfy those "I need something sweet" cravings. Each ball has about 12g of protein, and 190 calories per serving *depending on what you add to it. They are super quick, simple, require minimal equipment, and no baking needed!


Ingredients you will need:

  • Peanut butter or any other nut butter: Try opt for a natural nut butter - the type of one that has the oil at the top that you need to stir through. That's the good stuff. For the batch pictured: I used 1/2 peanut butter, 1/2 sunflower butter.

  • Protein powder: I used a vanilla flavoured plant-based protein powder. If you can tolerate Whey, this will generally give you a higher protein count.

  • Coconut flour: This helps to add bulk to the mix so you can form a dough. Almond flour also works well.

  • Hemp seeds: This is just an option! They are great for adding in some extra protein, nutty crunch, omega 3 and omega 6 essential fatty acids.

  • Chocolate chips: Try opt for a dark chocolate option with minimal ingredients. I personally like to use between 72-90% cacao chocolate.

  • Pantry staples: Coconut oil, salt, vanilla extract, monk fruit or alternative.



Ingredients:

  • 2/3 cup nut butter

  • 2 tablespoon coconut oil *liquid form, room temperature

  • 3/4 cup protein powder

  • 1/3 cup monk fruit granules

  • 1/4 cup coconut flour *might need more if end consistency is too runny

  • 2 tablespoon hemp seeds *optional

  • Pinch of salt

  • 1 teaspoon vanilla extract

  • 1/4 cup chocolate chips




Method:

  1. In a large bowl, combine nut butter, coconut oil, and vanilla extract.

  2. Add the protein powder, sweetener, flour, hemp seeds*, and salt. Mix until combined and into a dough consistency.

  3. Stir in choc chips with silicone spatula.

  4. Roll into balls about 1 inch in size. Refrigerate until firm.


Consume within 1-2 weeks or freeze for 2 months.
